How we measured breakfast quality
We used Aspect-Based Sentiment Analysis (ABSA) to isolate the part of each review that talks about breakfast and measure how positive it is. The result is a % Positive score for Breakfast Quality at every hotel.
- % Positive is not a star rating. It is the share of breakfast-related guest comments that are positive. A hotel can have a strong overall star rating and still score differently on breakfast.
- Ranking order. Hotels are ranked by % Positive first. The review count is shown next to every score so you can judge how much feedback sits behind it.
- Ties. Four hotels share a 99% score. They are listed in order of how many breakfast reviews they have.
- Minimum sample. To be ranked, a hotel needs at least 20 breakfast reviews. Silvana Mountain Hotel scores 100% positive, but on only 11 breakfast reviews, so we removed it from the ranking. Hotel Coeur des Alpes, at 21 breakfast reviews, is the smallest sample among the five hotels shown, so treat its 100% as a very strong early signal rather than a settled verdict.

Hotel Coeur des Alpes takes the top spot with a perfect breakfast score: every breakfast-related guest comment in the data is positive. It is also the highest-rated hotel in this analysis overall, with a 4.98 rating from 61 reviews.
Breakfast fits a hotel that scores perfectly across the board. Front Desk & Staff is 100% positive across 59 reviews, and Location & Access, Room Quality, and Amenities & Facilities are all 100% positive too. The caveat is the small number of breakfast reviews (21), so its lead over the next four hotels should be read with care.

Europe Hotel & Spa has a 4.77 overall rating from 196 reviews. Room Quality scores 100% positive across 112 reviews, and Food & Beverage reaches 97%.
What the top five have in common
Reading across the four hotels where we reviewed guest comments in detail (Welschen, Bellerive, Romantica, and Europe Hotel & Spa), a few themes repeat.
- Regional products. Local cheeses, air-dried beef, Zermatt produce, and fresh regional breads appear in guest feedback at all four hotels.
- Cooked to order. Made-to-order eggs, omelets, and coffee come up at most of them, and guests clearly value food prepared for them rather than only a self-service spread.
